Whole chickens are one of the least expensive cuts. In my neck of the woods they typically run $.79 a pound, less on sale. For just a few dollars you can have a delicious meal.
Beer Butt Chicken
1 whole chicken-thawed completely if frozen
1 can beer
3 chopped garlic cloves (or a couple of tsp garlic powder)
2 tbs butter, salt, pepper
Place garlic, butter, salt & pepper in a half empy can of beer. What you do with the other half is up to you. . . me? I'd drink it. Waste not want not.
Slide the chicken right down onto the can-butt first.
Grill the chicken (or bake in the oven) for around an hour or two. Low and slow is the key here-you don't want charred outsides and raw insides.
Tips & Tricks:
Place chicken on a cookie sheet or such before putting it on the grill to prevent flare-ups from dripping fat & juice.
Coat the outside of the chicken with a dry rub.
Other possible additions to the beer-chopped onion, jalapeños, various and sundry spices. Do a search for “Beer Butt Chicken Recipe” and you'll find variations.
